Homemade “Nutella” One of the weekend snacks for my kids this past weekend: homemade Nutella (giandujia paste) on toast, with a few slices of pear from our CSA share. I had been meaning to try making some sort of nut butter from scratch, so I figured I'd try something like Nutella. Turned out to be pretty straightforward, although it's not quite as thick as Nutella (presumably because I didn't add any emulsifiers or supplemental oils.) It's also not quite as smooth as Nutella, but isn't noticeably gritty, either. The kids have been eating it nonstop (most recently, by dipping strawberries in it). Ingredients 1/2 lb. raw, skinned hazelnuts 1/2 c. confectioners sugar 1/4 c. dutch process cocoa powder (I used Hershey’s Special Dark, which isn't completely dutched) Directions Spread hazelnuts on a baking sheet and toast at 350°F until they smell nutty, show little bits of brown, and some of their oil comes to the surface, 10-15 minutes. Transfer toasted nuts to a food processor fitted with a metal blade and process. The nuts will first get chopped, then begin to clump together, then start to smooth out into a paste. How long this takes depends on your food processor; it took mine about 4-5 minutes. Scrape anything that sticks to the sides and bottom of the bowl off, and process again until smooth. Add the sugar and cocoa, and process again until well combined, about one minute. Transfer to a covered container and store in the refrigerator. It'll keep for a few weeks (if it lasts that long). Smells Like Dinner - but Where Is It? Binjai, Sumatran tiger, is looking for her dinner. The log strongly smells of fresh meat - she knows it was here, but where is it now? Seconds later, she discovered the meat partly buried just under the log. Sumatran tigers are the most orange of all tiger species. For most of the weekend, Melbourne (in mid-winter) was under threatening and leaden skies, meaning extra dark lighting conditions in the already dark tiger enclosure - but the sun did come out very brightly mid-afternoon, adding to the difficulty in capturing photos! Binjai didn't grace us with her regal personage for very long, nor did she deign to sit in the open, so I had to take quick photos like this one with branches infiltrating the picture. Mum Binjai is about 6 yo and in perfect health. She has been an excellent mother, and the cubs are her first litter. Melbourne Zoo has a wonderful enclosure for the tigers - it is styled very much as Sumatran rainforest, with lots of trees, and even a pond to swim and play in. Melb Zoo staff are taking part in a proper preservation program for Sumatran wildlife - not just joining an international captive breeding program (although they do, and that is vital given the parlous state of Sumatran tigers in the wild) - they actively buy back land in Sumatra with the intent to rehabilitate the land as a wildlife preserve, to give animals such as the tiger and the Sumatran Orang-utan a chance to flourish again.
